I love potatoes. Mashed, fried, or baked. Just about any way you can make them I will eat them. In Because I Love You, Andie sits down to a family dinner, and mashed potatoes are on the menu. She’s had a lot thrown at her the last few days and hasn’t much of an appetite, but she eats a few bites. I remember thinking, when I was pregnant, mashed potatoes have to be the best thing ever. There’s just something so homey and comfortable about them. But they can get boring. Nobody likes a boring mashed potato, so I thought why not jazz it up? My son had trouble saying it, so we’ve all adopted the name Tadoes.
1 pound red potatoes
3 garlic cloves, roasted and mashed
1/2 teaspoon pepper
1/2 stick butter
1/2 cup milk
1 cup grated Parmesan cheese
Cut potatoes into cubes (leave skin on). Boil potatoes in a large stock pot of salted water until fork tender (about 15 minutes). Drain potatoes and return to pot. Mash potatoes with a potato masher. Mix in the minced garlic and pepper. Stir in the butter and milk. Stir until butter is melted. Mix until melted. Add in the Parmesan cheese and stir well until cheese is incorporated and melted. Serve warm.
