#FoodieFriday: Because I Love Lasagna


In Because I Love You, Andie gets some news and it’s stressful, to say the least. Stress, cravings, and morning sickness are sure to make any day tough. Stress is something we all feel. And when we are stressed we want comfort foods. One of my biggest comfort foods is Lasagna. It’s easy, tasty, and almost everyone loves it.

12 lasagna noodles, cooked al dente
1 jar of your favorite pasta sauce
1 lb Italian sausage, casings removed
1 onion, finely chopped
3 cloves of garlic, chopped
red pepper flakes
2 cups ricotta
2 cups mozzarella (Plus more for topping)
1 1/4 cup parmesan cheese
1/2 chopped parsley
2 eggs
Salt and Pepper to taste

Preheat oven to 350 degrees.
In a 13×9 baking dish, pour enough sauce to cover the bottom so the roll ups don’t stick.
Brown sausage and break up into small pieces, add onion and sauté until tender. Add garlic and cook until fragrant about a minute, and season with red pepper flakes to taste.
Mix together the ricotta, mozzarella, parmesan, parsley and 2 eggs in a large bowl. Season cheese mixture generously with salt and pepper.
Lay out the lasagna noodles and top with cheese and sausage, leave a border at the top and bottom ends.
Roll them up and lay them in the baking dish.
Cover the lasagna rolls with the rest of the sauce and mozzarella cheese, and bake covered for 30 minutes.
Uncover and put under the broiler until cheese is starting to brown and melted.
